Make Your own Pickled Vegetables

Found this fabulous book in the Herb Store...it is a "Beauty book"..on how to look beautiful at any age..
I picked it up because the woman has some damn good information in it..and...she is a Russian mathematician...so i can call her sister..

Tonya Zavasta's book called "Your right to be Beautiful.."

Okay so here is the pickled Veg recipe..

You will need a gallon glass jar..and cucumber, baby carrots, brocolli florets, cauliflour florets, etc..even watermelon with runds can be used..

MARINADE (i used dried ground spices)
Braggs Apple cider vinegar
3 cloves garlic
2 Tablespoons cumin
2 Tablespoons coriander
2 Tablespoons ginger
1 Tablespoon Cayenne pepper

Place the Vegetables in the one gallon jar and cover with the dry spices and garlic (i used dry garlic) and now completely cover the veg with a mixture of 50% vinegar and 50% water..
Cover the jar with a towel and set aside for 2-3 days at room temperature so it can ferment..then cover and refrigerate jar...Use vegetables within two weeks.


i just made some and they are pretty good.
The only thing i would prefer in this recipe is some added salt..
these are supposed to be beneficial because they repopulate the gut without using dairy..

UPDATE..
i am having trouble staying out of these..they are really good with a bit of salt
...i wonder if i can REUSE the marinade mixture or if i have to start from scratch every time..maybe i will wqrite to her and find out.
